Sandor Ellix Katz is an American food writer, activist, and self-described "fermentation revivalist" widely recognized for popularizing traditional food fermentation. He earned the nickname "Sandorkraut" through his extensive work with fermented foods, particularly sauerkraut, and has authored several influential books on the subject, including "Wild Fermentation" and "The Art of Fermentation." Katz, an AIDS survivor, attributes fermented foods as an important part of his health regimen and teaches workshops globally to demystify and share fermentation techniques.
